I am not a foodie - not even close. The sub-header for this blog lists 'living gluten-free' as a featurette, but truth be told I try to do that as unobtrusively and inexpensively as possible - which means that most of the things that come off of the food press over here are pretty, well, boring. Both Daniel and I have some variation on the theme of celiac's disease, but we also have a tight budget. I use rice and potatoes where most people use pasta or bread, with a few standby substitute recipes thrown in.
Usually, there isn't much worth blogging home about on this front. But with Operation Empty The Cupboards in full-swing at the start of a new year, I tweaked around one fairly common recipe, and I thought the results worth sharing.
Flourless Dark Chocolate Peanut Butter Cookies
Recipes for peanut butter cookies can be easily located through your local Google search engine. Some include vanilla and baking powder; others … don't. This is a mash-up of the simplest recipe with what I happened to have in my cupboard: brown sugar and dark chocolate peanut butter.
First, preheat your oven to 350 degrees F. (I almost never do this first. It always happens somewhere in the in-between.)
Ingredients:
- 1 C dark chocolate peanut butter
- ½ C brown sugar
- ½ C white sugar
- 1 large egg
- 1 C mini chocolate chips
Mix ingredients thoroughly. There is no rocket-scientry to be had here. I only had a smattering of chocolate chips in my freezer, so I threw them in pro bono. They may be used or excluded according to preference. Chunky peanut butter is more than acceptable as well.
Spoon onto a flat baking surface (I like my stoneware!) - approximately 1-2 teaspoons per cookie, as you wish. I used a fork to imprint mine and flatten them a little; this is entirely superfluous.
Bake for 8-15 minutes. I like my cookies on the Sith side of things, but you may think differently. Let cool 10-15 minutes before removing from the pan.

DeleteI'll have to give this recipe a whirl. As one of my more boring goals this year, I'm trying to stay away from white flour. (Its effects on my energy were less than desirable!) But I've got a sweet tooth - and these look splendid. :) Thank you!
ReplyDeleteI love recipes that don't require foraging in a health food store (which is fun, don't get me wrong, just... impractical and expensive). The best thing about this one is that it's all in the cupboard - and short of digging them out of a can, it's even easier than most wheat-based cookies.
